In the heart of the capital stands the oldest Jewish restaurant in Rome, Ba'Ghetto. It was founded in the 1980s by the Dabush couple, who opened the first location in the Piazza Bologna area. Roots and culture have been handed down over time to their four sons - Avi, Ilan, Eran and Amit - who have picked up the legacy, becoming its current managers and opening other locations in Milan, Venice, Florence and Rome again, among the streets of one of the oldest Jewish ghettos in the world.

What has always distinguished Ba'Ghetto is the combination of history and innovation. Its Judeo-Romanesque cooking tradition involves the reinterpretation of some local dishes following the dictates of the Kosher religion, which stipulates the suitability of consumable food and drink according to Torah law. This vision of food, the search for the highest quality ingredients, and the original flavors and recipes, typical of Tripoli and Middle Eastern history, have made Ba'Ghetto a place where cultures meet.

Even the service mirrors the customs that characterize the cuisine. All Ba'Ghetto restaurants are strictly Kosher and strictly observe Jewish holidays. For example, on Shabbat, the rest day celebrated on Saturday, those observing can make reservations online for Friday dinner - which takes place at the end of the Arvit service - or Saturday lunch, with a set menu.

The Jewish tradition boasts a culture thousands of years old from which Ba'Ghetto draws its origins. However, its owners are well aware of the importance of keeping up with the times in a world - the restaurant business, but not only! - that is constantly evolving. Then one can easily recall their records and view their history as needed.

"Digitization is important for the organization of internal work, as long as it does not create a barrier with the customer," says Amit, "Tilby is a POS with advanced features for managing the rooms, but also the warehouse, inventory and suppliers. The cloud system allows us to optimize processes while maintaining high service quality. Thanks to the point of sale, we have activated the Restaurant Module, which among many features allows us to collect all delivery orders; and the Chains Module, with which we can monitor both the Analytics of individual stores and the general aggregate of the main KPIs."

Innovation also comes through the cuisine
The evolution of the restaurant and its desire to reinvent itself, however, does not only affect the digital world. Inclusion also comes through gastronomy. This is why in restaurants that serve meat, no dairy is served, and vice versa. In fact, the historic eatery exists in two versions: the one dedicated to meat and the milky one. This is a very interesting and hugely relevant aspect not only for observant Jews, but also for vegetarians, vegans, or those who are lactose intolerant and allergic, who have an entire menu of desserts made from soy milk. For Amit, "the goal is to serve simple and tasty dishes in a family environment so that the customer can feel at home." With this in mind, Ba'Ghetto opens its doors to those who want to enrich their culinary experience by learning how to replicate traditional dishes at home as well.
